Meredith is here talking yogurt! She is sharing her version of dairy-free coconut yogurt. Enjoy!
I've always been a yogurt fan. I think I heard it was "healthy" when I was about 5 and had it for lunch everyday until I went to college. (Yes, of course it was the low fat fruity crap) These days I've obviously moved on to bigger and better things, but I still get a craving for that tart, sweet and totally satisfying flavor. I'm definitely not opposed to little bits of high- quality, full- fat, goat or sheep's milk yogurt, but most of the time it isn't quite refreshing enough.
This familiarity is probably is why I am obsessed with making my own coconut "yogurt". My version isn't real yogurt because I never take the time to ferment it, but if you have the patience you certainly can. I fake the healthy bacteria by adding probiotic capsules to this blend.
As we've mentioned coconut is just insanely good for you. For some more good info on the coconut subject, check out this web site.
This whole combination is totally skin fuel- perfect for the summer skin stresses!
Ok, let's eat.

Juice of 1 Lime
1 Probiotic Capsule
1 Scoop of Tocotrienols
Bee Pollen (optional)
Blend all ingredients except for bee pollen until smooth. Top with pollen.
Serve immediately or slightly chilled.
