Coconut Cucumber & Cliantro :: Polenta :: Seaweed Wraps

I'm gearing up for Spring Time Giveaway #2 { products } and have also been busy over at the Kookie Karma office. But more importantly I've been spending some fun quality time with the boys now that the days are longer and warmer. 

We've done quite a few "Spring cleaning" projects together and we're all cleaning up our diets as well - getting ready for SUMMER fruits and veggies to be in Season. 

I have also been working out a bit more as well and practicing using my new camera lens. I have documented a few of the fun domestic activities.

For the polenta, I just heated it on the stove until warm and crispy. I chose the quinoa polenta because it was more interesting and the ingredients list was clean and short. For the quacamole all I did was add avo, lime and sea salt. The orange stuff is raw hummus. 

The coconut water with cilantro and lime, looks kind of freaky and electric. It's not. It was AMAZING as a post workout beverage. I put the young coconut water {fresh from coconut} into Vitamix along with cilantro and half a cucumber. I blended for a minute and then strained out the foam with a strainer. I then chopped the cucumber and threw that in with ice. 

The wraps are actually a combination of avocado {and sea salt} mashed on raw seaweed sheets with my YUMMY cabbage salad {click for recipe}.
