More On Quinoa

I didn't have much in the house last night for dinner and I wasn't in the mood for making anything too high maintenance so I boiled some quinoa and added sea salt, olive oil and avocado with a handful of fresh parsley. It was so fresh tasting and filling.

My son loved it and it literally took me no time at all. He's been anti-veggies and pretty much anti-food lately (unless it's a banana or a smoothie) so I was glad I could find something he liked.

Tip: Get your avocados unripe and let them ripen at home. This way you can be sure that they aren't bruised or brown.
