Fennel White Corn Salad

This salad is the best for people who like fresh, spicy, tangy salads. It's super easy and a great idea for parties, BBQs and other pot luck dinners; or it can also be a simple, light summer dinner.

1 fresh fennel bulb, sliced super thin (shaved)
2 ears of white corn, shaved off the cob with a knife
1 jalapeno, finely chopped
1 avocado, diced
1 c fresh wild arugula or other greens
1/2 c feta cheese (optional)
2 lemons, juiced
olive oil, drizzle
sea salt

Put all ingredients in a bowl and mix together. The greens/arugula make the salad pretty with color. Use only part of the jalapeno if you don't like too much spice, however, the spice is what makes the salad taste so good. Use enough lemon as well for tang.
