Vegan {healthy} Shells + Cheese

I was really excited to work on this recipe a few days ago for the Honest Company blog. As a kid I was a mac + cheese expert. Anybody who knows me now that knew me then, still brings it up..."remember when you'd eat macaroni and cheese for dinner every night?" I was obsessed and so to this day, it's my only "comfort food" that I can actually recall; the only food I think of when people talk about craving comfort foods. 

When I had kids of my own, I was torn. There was part of me that didn't want to rob them of this wonderful memory; enjoying this exact food that I loved so much growing up! But at the same time, I know it's not good for them and even the Annie's stuff {although way better} isn't any better than a bowl of powdered cheese and flour. 

So I decided to create a sauce that mimics the creamy, cheesy and comforty {a new word I created} feeling of mac + cheese but without the dairy and without the gluten or dyes or preservatives or powdered milk and whey. 

If you have followed this blog since its start, you might recall my first ever attempt at this recipe? I love it and my kids did too until they had REAL Annie's mac and cheese and then never went back. So I have been playing around with my recipe; making changes that are subtle but substantial enough that my kids will actually eat it. 

Try it at home and see what your kids think. If your kids are already healthy eaters, this will probably go over VERY well. If your kids are used to Kraft every night then this might take some time. Be sure to try it a few times because it can grow on you. And this is NOT JUST FOR KIDS!!! I ate 2 bowls of it a few nights ago! Good luck and I'd love to hear your thoughts.
