{RAW} Cheezecake :: Kimberlie's Kitchen

Another wonderful recipe from Kimberlie {of Tomberlies}. This has got to be good. Afterall, she is the queen of dessert!

Cheezecake:

Crust:
1 c. almonds ground with 1/2 tsp. salt.  Add 4 large, soft dates,  
pulse to form dough.  Press into 8" spring form pan.  Freeze.

Filling:
3 c. cashews
juice of one lemon
1/2 c. agave
1 1/2 c. coconut H20 or almond milk
1/2 c. melted Cacao butter
1 vanilla bean

Blend first 5 ingredients until smooth, add in melted cacao butter,   
pour into spring form pan.  Freeze for one hour, or chill in  
refrigerator overnight.
